One Jar. Twelve Dishes. My Secrets for Effortless, Flavour-Packed Dinners

13 May 2026 By

Hello, home cooks. It truly was an epic feast at my place recently. What started as just one jar of my Korma (Kuruma) Masala Paste quickly turned into 12 flavour-packed dishes. It just goes to show how far a quality concentrated Indian curry paste (or Southeast Asian curry paste, for that matter) can really take you in the kitchen.

I turned a simple roast chicken into wraps, tacos, pasta, and fried rice. I also turned slow-cooked lamb into the most comforting leftover meals the next day. Just a spoonful here and there added such rich flavour to vegetables, seafood, steak sauces, and marinades, all
without needing a pantry loaded with tricky ingredients or a complicated recipe.

For my busy friends looking for authentic flavour, convenience, and better value at the supermarket, this is the kind of product that truly earns its permanent spot in your pantry.

A Pantry Shortcut That Still Tastes Like “Real Cooking”
Many ready-made sauces rely heavily on sugar, starches, and fillers just to create volume. They might look convenient, but you often need half a jar just to find the flavour!

At Latasha’s Kitchen, I take a very different approach. My award-winning Korma (Kuruma) Masala Paste Concentrate contains only clean, 100% natural ingredients. It’s gluten-free, made right here in Australia, and inspired by the authentic Indian and Southeast Asian recipes I grew up with.

Because it’s a concentrate, the jar works so much harder for you. A spoonful stirred through yoghurt becomes a tangy marinade, or mixed with coconut cream, it creates a rich, velvety sauce. Whether you’re adding it to seafood or leftover roast meats, it instantly adds warmth and complexity without you spending hours at the stove. It’s the kind of ingredient that quietly becomes indispensable once you start playing with it.

One Jar, Multiple Meals, Less Waste
One of the smartest things about cooking with these pastes is how they help you reinvent leftovers. In a recent Instagram reel, I showed how one cooking session led to an incredible range of meals.

I marinated a whole 1.5 kg chicken using just one-third of a jar mixed with ghee. That was Dish 1. After our roast dinner, the leftovers became:

  • Dish 2 – Korma chicken pasta
  • Dish 3 – Korma chicken tacos
  • Dish 4 – Korma chicken wraps
  • Dish 5 – Korma fried rice

There really was something for everyone in the family to enjoy. I then used another portion of the paste for lamb shanks, Dish 6. It later evolved into a delicious lamb shank ragu served with couscous or pasta.

Then, there were the comforting lamb dishes that stretched across several meals. That same jar provided the base for:

I used the remaining paste for:

  • Dish 10 – Korma butter sauce for steak and vegetables
  • Dish 11 – Korma roast vegetables
  • Dish 12 – Korma barramundi with coconut

Instead of buying separate sauces for every single meal, one jar acts as your foundation. It keeps things interesting while helping you keep food waste down and reducing your grocery spend.

Mild Enough for Families, Flexible for Everyone Else
My Kuruma Masala sits in that lovely “sweet spot”, flavourful without being overwhelmingly hot. Its medium heat makes it suitable for everyday family cooking, but it still has the aromatic richness you expect from a good curry base.

It’s incredibly adaptable. If you prefer a milder, creamier finish, you can soften the paste beautifully with:

  • Coconut milk, cream, or powder
  • Fresh cream, yoghurt, or buttermilk
  • Evaporated milk
  • Crushed tomatoes or tomato paste
  • Caramelised onion puree

And if you love the heat like I do? Simply add some green chilli puree or dried chilli early in the cooking process.

Real Flavour Without the Overwhelm
I know there’s a misconception that authentic Indian cooking has to be difficult. The fact is, most of us don’t have time to toast and grind spices from scratch on a Tuesday night. But that doesn’t mean you want bland food!

My goal has always been to bridge that gap. You still get the satisfaction of cooking a real meal, but with much less kitchen stress. You can marinate your chicken before work, slow-cook lamb on the weekend, or whip up a midweek dinner in under 30 minutes.

Even simple pantry items get exciting. Try a spoonful folded into mayonnaise for a sandwich spread or stirred through rice for instant fragrance. Mixed into butter, it completely transforms a grilled steak. Why not explore the multitude of other recipes you can make? Just scroll down on that page for more ideas.

Why This Makes Economic Sense
With grocery prices rising, we are all looking for products that stretch further. Because the flavour in these pastes is so powerful, you use far less  per meal compared to diluted sauces. One jar can flavour numerous dishes throughout the week. It also makes affordable proteins, like a simple roast chicken or a tray of vegetables, feel much more satisfying.
