Our Production Process
The flavour in every product is crafted, developed and produced by Latasha with love, passion and a generous heart.
The reach and range of Latasha’s Kitchen products has grown but every product is still created by hand in a small-batch kitchen in Australia.
“I am an Australian producer using a locally-based small-batch commercial kitchen to help me produce my products to my original formulation. This is what I believe in. So nothing soothes my soul more than supporting other Australian growers, producers and other businesses. I firmly and passionately believe in this. Which is why although I can make my products for a fraction of the price I pay overseas or with lower-grade ingredients, I will never consider taking that option.”
The concentrated home-style pastes, condiments, relishes and dressings are made with a generous mix of mostly local Australian and a selection of imported ingredients. The ingredients that aren’t locally-sourced are authentic spices, fruits, nuts and herbs:
“If I could source all of the ingredients that I need in Australia, I would make and sell a 100% Australian product. However, I can’t get some of the herbs and spices I need here because we simply can’t grow them in our climate.”
Imported ingredients are from reputable, quality producers in India, Sri Lanka, Malaysia, Thailand, Indonesia, Fiji, Phillipines, Europe, USA and Canada. These are mostly dried herbs and spices. Local fresh whole ingredients are from the best growers across Australia. This includes beetroot, coriander, coconut, cream, curry leaves, chillis, jalapeno, paprika, garlic, horseradish, kaffir lime leaves, limes, lemongrass, lemon, mint, almonds, peanuts, cashews, onions, orange, sultanas, oregano, parsley, sugar, sea salt, honey, tomatoes, vinegar, yogurt and more.
Latasha sourced a boutique contract kitchen in that was willing to help to convert her small-scale home recipes into commercial small batch quantities without any shortcuts. They were also happy to cook alongside Latasha in the production process. This kitchen is located in Sydney and Latasha travels from Perth to cook:
“At the moment, I travel about 4-5 times a year. I travel with my trusty spice blender under my arm every time. My kitchen team are great and they know how I work and ensure that only the best, freshest and tastiest produce is there waiting when I land. We all work tirelessly to ensure that each product is perfect.”
All of our products are PH tested and our jars are hot-filled to ensure that when you open the jar, it smells as fresh as it is.
