Zucchini Ricotta Fritters with Latasha’s Kitchen Zingy Tomato Relish

Ingredients (serves 4)

  • 4 large eggs
  • 250 g ricotta cheese
  • 1 large zucchini, grated
  • ½ cup basil leaves (optional)
  • Pepper
  • Butter for greasing the pan (2-3 teaspoons)
  • For serving − top with 1 sliced avocado and Latasha’s Kitchen Zingy Tomato Relish


  1. Mix the eggs, ricotta, grated zucchini, basil and pepper in a bowl
  2. Heat the frying pan and grease with 1 teaspoon of butter
  3. Add three large dollops of the mix to the pan and cook on medium heat until the underside of the fritters and the centre is cooked, flip and cook the other side
  4. Remove to a plate when done and repeat with the rest of the mixture

Portion plating

  • ¼ plate protein-rich food – provided by the 4 fritters (eggs and ricotta)
  • ¼ plate low GI carbohydrate – toasted dense grain bread
  • ½ plate vegetables – provided by the zucchini and salad
