Latasha’s version of a much-beloved Filipino dish made with grilled eggplant and eggs. A simple flavour filled and comforting homestyle dish served over rice.

Filipino Eggplant Omelette


Ingredients

  • One whole eggplant with stem
  • Latasha’s Kitchen Funky Black Bean with Peanut & Miso Chilli Oil
  • 4 eggs
  • 1 tbsp soy sauce
  • 1 tsp of chicken stock concentrate (optional)
  • 1 tbsp sesame oil
  • Freshly ground white and black pepper
  • Pinch of salt
  • 2 shallots, diced
  • Bunch of fresh coriander leaves and stems, chopped
  • 1 bunch spring onions, thinly sliced
  • Green and red chillies (to your taste), sliced

Garnish:

  • Reserve some of the chopped spring onions, coriander and chillies as a garnish.

Method

  1. Grill the whole eggplant in a hot oven, or over a flame on stove top, until all sides are fully charred and crisp. Cool the eggplant then carefully peel away the charred skin leaving the stem intact. On a large plate, lightly holding on to the stem, flatten the eggplant with a fork until it’s flat with the stem left in.
  2. Beat together eggs and season with salt, soy sauce, chicken stock concentrate (optional), sesame oil, white and black pepper, diced shallots, fresh coriander leaves and stems, spring onions, green and red chillies.
  3. Dip the flattened eggplant carefully into the seasoned egg mixture to marinate for 10 minutes maximum. (If marinated too long the eggplant may disintegrate in the egg mixture.) Pour the mixture into an oiled large flat fry pan (cast iron or carbon steel) or a well-seasoned wok and pan fry. Once crispy flip the omelette over gently by holding the stem section on your spatula. Fry for another few minutes until set and crispy.
  4. Cut omelette into sections and serve with a drizzle of Funky Black Bean with Peanut & Miso Chilli Oil.
  5. Garnish with reserved spring onions, coriander and chillies and serve with rice.

TIP: If the omelette is too large to flip over in one piece without coming apart, simply grill/broil in a hot oven until cooked and crisp.
