Green Chimichurri Mango Prawn Salad

Our handmade Green Chimichurri Sauce works well as a table sauce for adding to cooked foods, gorgeous as a marinade for meats, seafood and vegetables or as a dressing as in this beautiful fresh salad.


  • Small bag of fresh baby spinach leaves
  • 2 ripe mangoes, sliced
  • 1 ripe avocado, sliced
  • 300 g cooked prawns, peeled and deveined, tail intact
  • Pulp of 1-2 ripe passionfruit

Mix garnish in a bowl

  • 1 tbsp fresh red chillies thinly sliced
  • 2 tbsp finely sliced red onions or shallots
  • Small bunch fresh coriander leaves (English mint would work well too)
  • 2-3 tbsp chopped chives or spring onions



  1. On a medium size platter scatter the baby spinach leaves, arrange mango and avocado slices, followed by the prawns. Spoon over the passionfruit pulp.
  2. Spread garnish all over the salad.
  3. Season salad with cracked pepper and lemon juice. Mix Green Chimichurri and Caramelised Apple Cider Vinegar together and dollop over the salad. Drizzle with extra virgin olive oil and enjoy immediately. Or you can refrigerate the salad for a few hours covered tightly with cling wrap and season just before serving.

TIPS: Cold cooked chicken and mango would work marvellously well. Segmented naval oranges instead of mango would be very good. Instead of baby spinach, try using rocket leaves, baby beetroot leaves or a salad mix.

  • Watermelon, mint, crumbled feta pieces, fresh pomegranate and toasted crushed nuts (walnuts and pecans tossed in hot paprika, butter and honey then baked, cool, before lightly crushing. Scatter over salad). Drizzle with Green Chimichurri Sauce and walnut oil.
  • Cold platters with smoked duck and blood red oranges, sausages and heirloom tomatoes or smoked fish with capers and crème fraiche will also pair well with Green Chimichurri Sauce.
  • Cooked lobster tails and grilled fresh pineapple or peach salad with cherry tomatoes. Just add the same garnish and season as per Green Chimichurri Mango Prawn Salad
