Bruschetta or Tomato Basil Salad with Latasha’s Kitchen Caramelised Balsamic Vinegar

Ingredients (serves 2)

  • 4 slices of dense grain sourdough bread
  • 3 tomatoes
  • ½ cup shredded basil leaves
  • ¼-½ chopped onion to taste
  • 1 garlic glove for rubbing the bread and 1 small one chopped
  • A drizzle of Latasha’s Kitchen Caramelised Balsamic Vinegar
  • A drizzle of extra-virgin olive oil
  • Pepper to taste


  1. Dice the tomatoes and drain away the extra juice
  2. Finely chop the onion
  3. Mix the tomatoes, chopped garlic, chopped onion and shredded basil
  4. Drizzle over the olive oil and Latasha’s Kitchen Caramelised Balsamic Vinegar
  5. Toast the bread and when toasted rub the surface with the garlic clove then chop the remainder and add to the tomato mixture
  6. Season with a grind of black pepper

Portion plating of this lighter meal

  • ¼ plate – lower GI bread, 2 slices
  • ¼-½ plate vegetables, increase the amount of the tomato mix you put on top to increase this
  • To get the ¼ plate amount of protein-rich food you could have this with a dollop of ricotta or some cheese or alternatively team the dish with a dessert of a small tub of yoghurt OR a glass of milk
