Pizza with Red Capsicum

Easy Red Capsicum Pizza
Ingredients
- 1 frozen pizza base
- 1 large red or brown onion, sliced into rings
- 2 whole red capsicums, centre core removed then thickly sliced into rings
- A handful of pre-packaged bell peppers in olive oil marinade, stuffed with cream cheese filling
- 1 red chilli, sliced (optional)
- 2 tbsp Latasha’s Kitchen Zingy Tomato Chutney mixed with ½ cup Mutti tomato passata
- Extra virgin olive oil
- Salt to taste
Garnish
- Sprig or two of basil leaves, torn
- Latasha’s Kitchen Funky Black Bean Chilli Oil

Method
- Pre-heat oven to 220˚C.
- Heat oil in a pan, add onions with a pinch of salt and cook gently until the onions have softened slightly. Cool.
- Spread Latasha’s Kitchen Zingy Tomato Chutney/passata mixture generously over the frozen pizza base. Arrange capsicum rings neatly on top, spread softened cooled onion around the outside and place a bell pepper inside each capsicum ring. Scatter with chilli slices if using, drizzle with olive oil and salt flakes to taste.
- Then carefully place pizza base on an oven tray. Cook in the oven for 15 − 20 minutes until the crust is golden.
- Scatter over the torn basil leaves. Serve immediately topped with a generous drizzle of Latasha’s Kitchen Funky Black Bean Chilli Oil.
