Bold and spicy pizzas


Ingredients

  • 1 frozen pizza base
  • Fresh pineapple, peeled, cored and cut into ¼ inch pieces or use 1 medium can pineapple pieces in natural juice, drained
  • Mild pepperoni, sliced or use ham
  • Mozzarella cheese or crumbled feta
  • 2 Jalapeno chillies, sliced
  • 2 tbsp Latasha’s Kitchen Green Coriander Sauce mixed with ½ cup Mutti tomato passata
  • Extra virgin olive oil
  • Salt to taste

Method

  1. Pre-heat oven to 220˚C.
  2. Heat frying pan on high then add a good slug of olive oil. Add pineapple pieces, jalapeno slices, a pinch of salt and cook on very high heat until slightly caramelised, approx. 2-3 minutes. Cool.
  3. Spread Latasha’s Kitchen Green Coriander Sauce/passata mixture generously over the frozen pizza base. Arrange cooled pineapple and jalapeno mixture, pepperoni or ham and mozzarella or feta all over. Drizzle with olive oil and salt to taste.
  4. Then carefully place pizza base on an oven tray. Cook in the oven for 15 − 20 minutes until the crust is golden.
  5. Scatter over the torn mint leaves. Serve immediately topped with a generous drizzle of Latasha’s Kitchen Funky Black Bean Chilli Oil.
