Date & tamarind chicken skewers
- 1 chicken thigh, cut into long strips
- 1 heaped tbsp Latasha’s Kitchen Date & Tamarind Chutney
- Salt and pepper
- 2 tbsp olive oil
- 10 cucumber slices, cut thick
Garnish
- Chopped parsley, snow pea sprouts and edible flowers
Method
- Marinate chicken with salt, pepper and 1 tablespoon of olive oil.
- Grill, BBQ or cook in a hot fry pan until just done.
- Mix with 1 tablespoon of Latasha’s Kitchen Date & Tamarind Chutney and 1 tablespoon of olive oil.
- Serve on cucumber slices, garnished with parsley, snow pea sprouts and edible flowers.
TIP: Combine 1 tablespoon of Latasha’s Kitchen Date & Tamarind Chutney and 1 tablespoon of olive oil to drizzle over the skewers.
