This recipe was inspired by my neighbour Phil’s obsession with my Vindaloo Concentrate Paste. Always finding ways to incorporate Vindaloo into his dishes, he made a pork and veal mince vindaloo curry and added a couple of tins of tomato to moderate the heat. Slowly cooked it was amazingly rich in flavour and super tasty.

As soon as I tasted a sample, I knew this Vindaloo Masala Simmer Sauce had to be born.
