We heat a saucepan with sesame oil and then add chilli flakes, sesame seeds, fresh garlic and pepper – then cover the saucepan and immediately turn off the heat.
We leave it to infuse the flavours until its cool to the touch. Once it cools, we pass it through a wire-mesh conical sieve.
Then we heat sunflower oil in a large vessel until it reaches 80 degrees celsius, add more chilli flakes and wait for the desired temperature.
We turn the heat off and mix the to together to get the perfect flavour balance.
Heat: Flavourful, fragrant and spicy but not too hot.
